Please let me know how you get on using a bread dough, it sounds a lovely alternative. You could also try using all vegetable shortening, rather than a mix of butter and Trex.
Ah yes, thanks, that would work normally since it would get around the lactose problems, but this weekend, we also have people coming over who are fat-intolerant – digestive issues from ageing livers 😞.
We've used this lean bread dough before for tarts and galettes, both sweet and savoury. But those require less "manipulation" – we probably need to lower the hydration so it can handle the pastie filling and being crimped etc.
Enjoyed being taken to Whitby for a few minutes, holidayed there as a child. Later came back with my own kids for a weekend. Great fish and chips!
